Winter is coming and as a cold person I need to warm myself up from the inside, this is where this delicious beef stew soup comes in, perfect for the cold!

I am a cold person, I don’t do well in the winter, I don’t enjoy the cold and I turn into a whiner (can you tell??)

So one of the things that I enjoy is food that leaves you feeling warm and tingly from the inside and heats you up properly! There is nothing worse than feeling like you will never warm up!! The other thing that I hate is watery soup, I prefer it to have a bit of substance and gives me something to actually eat (this has turned into a really negative post so far, let’s try to look at the positives!). As beef is one of the husband’s favorites so I have been looking for ways to incorporate it in chunks because I don’t really like eating it as a steak or a slab and I think I have found just the thing!

It’s made with beef stew meat which is essentially cubed beef over here in the UK and is delicious!

Ingredients

  • 500g Beef Stew Meat
  • 4 sliced carrots
  • 3 diced celery stalks
  • 1 diced white onion
  • 1 bay leaf
  • 4 diced garlic cloves
  • 550ml of made beef broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 850ml water (or more as needed)
  • Olive oil (for stove top recipe)

Method

What I love about this recipe is that you can cook it in two different ways, using a slow cooker if you want to leave it completely or over the stove in a traditional way if you don’t have a slow cooker so that anyone can do it. You can also use a pressure cooker for this but I don’t have one so I haven’t tested that but here are the other two options:

Using a slow cooker:

  1. Sear the beef in a small pan on both sides.
  2. Remove from the heat and place in the slow cooker along with the rest of the ingredients listed above.
  3. Stir together
  4. Cook on low for 6 hours or until the vegetables and meat are tender.

Using the Stove:

  1. In a large saucepan, add the beef, garlic, and onions and stir, making sure to sear the meat.
  2. Once seared on the outside, add in carrots and celery and saute for 2 minutes. If you find that everything is sticking you can add an optional tablespoon of olive oil to avoid this
  3. Add the water, broth and spices and stir the mixture together
  4. Cover and cook on a low heat for an hour or until the meat is tender. Making sure to stir every 10-15 minutes or so.

Serve and enjoy the delicious warmth hit!
