So, a new favourite in our house is sorbet! it is a healthy alternative to dessert if you have a sweet tooth and are watching the calories. It is also packed full of fruit so a great way to squeeze in 1 of your 5 a day. This low-fat sorbet recipe is even healthier and serves 3 – 5.

Ingredients
150g Frozen Mango
70ml Orange Juice
1 Egg white
25g Icing Sugar
Method
Blend together the orange juice and frozen mango (I don’t have a blender so I used a smoothie maker but it ends up quite thick so check what your equipment is capable of before throwing it all in 🙂 ) if you want to leave a few bits that’s fine it’s up to you how you like yours.
When blended, whisk (I used an electric whisk because it’s a lot quicker) in the icing sugar.
Separate one egg white into a different bowl and whisk until they are white and form light peaks, don’t over do them.
Pour the blended fruit mix into the egg white and whisk again until completely mixed.
Pour into a container (the best is to have it in a container so it is 1 inch deep) and freeze for around 3 hours (for best results eat within 2 days – the air tends to leave it after then)
If you need it to freeze sooner then spread it out over a larger surface area with a bigger box.
Once frozen serve on its own, with fruit or low fat biscuits
