Courgettes (or zuccini’s) are so useful, you can eat them raw or cooked, Grate them, chop them or as I have recently found out, grill them.
I have combined my love of cheeses with my need to eat more vegetables, to create this easy recipe that requires minimal preparation and is ready in under 10 minutes.Β
And let’s not forget it is tasty too!
These are the perfect appetizerΒ that come in handy yet filling bites that would be perfect to make in bulk since they are so quick to make and they are easy to “mass produce” for party food!
Now lets get on to the best bit!
Ingredients
*I made one batch in the pictures but this recipe makes 3 batches and would serve around 3*
Mozzarella – 1 ball – (Around 150g Drained)
3 courgettes
Pepper
The Recipe
Heat the pan – This is important to make sure it’s as quick – otherwise it takes longer to cook
‘Top and Tail” the courgettes and cut them into quarters, then drain and cut the mozzarella into pieces to fit onto the courgettes
(if you make them too big the mozzarella melts over the sides and goes everywhere! – this is the voice of experience!)
Put them insides down on the completely heated grill tray (I went diagonally to get some funky grill lines)
leave them in for 4 minutes
Turn them over and top with mozzarella
Put them back in the oven for 2 minutes
Take them out, place on a plate and top with pepper
If the mozzarella hasn’t melted completely leave them in for another minute – be wary that mozzarella doesn’t take long to burn so take care.
Serve and Enjoy!

I’ve never heard the term ‘courgettes’; we just call them baby or small zucchini. I’m smarter for coming here all ready! Great party and good luck with it:)
These look fabulous! I LOVE mozzarella. This would be fantastic to make for a party, as I’m always looking for healthier party food options. I don’t want to just have chips and dip. I like the effect of the diagonal lines on those too! My favorite recipe with mozzarella is probably pizza. My hubby makes it sometimes. π

I love mozzarella! I never know what creative things to do with courgettes though. I tend to steam them or stir fry them. I’m definitely going to try this recipe! Thanks for hosting #YumTum x
