I wanted to create a clean and delicious alternative to a great dish that I miss quite a lot now I am eating healthily and that is – MEATBALLS (dun dun dun)
I love a good meatball! Maybe it’s all of the Lady and the Tramp I watched as a child but they are just delicious, the downside? they can be quite fatty. Usually meatballs are made with pork or beef (and sometimes a combination of the two) and can contain high amounts of saturated fat (probably one of the reasons I love them so much!).
While researching for another project I found out that you can get turkey mince (mind blown!) so I decided that it couldn’t hurt to experiment! and I am so glad that I did. I chucked in some spinach because it was in the fridge and I had no idea what else to do with it and bish, bash, bosh I accidentally stumbled upon these beauties.
I have had them in a tomato and red pepper sauce with noodles, with rice and vegetables and I have even had them cold from the fridge – they were delicious every time and even better than that they were guilt free! (boom) so here’s the recipe so that you can enjoy them too!
500g Turkey Mince
180g Baby Spinach
1 Teaspoon Olive Oil
Pre-heat the oven to 200 Degrees
Heat the olive oil in a pan for 2 minutes
Wilt the Spinach in the pan, stir frequently and remove from the heat
Combine the cooked spinach and turkey mince in a bowl and mix them together
Line a baking tray with grease-proof paper
Roll the mince and spinach into balls, these taste better when they are a bit bigger so you have a better ratio of spinach to turkey
Place in the center of your oven for 5 minutes
Flip them over and place in the oven for a further 7 minutes
You can have these on their own or add to a tomato base sauce served with Courgette spaghetti (that tastes delicious) OR you can even have them cold from the fridge (that tastes delicious as well, all in the name of research!!)
